Kitchen Sink Chili



Don't feel daunted by the gigantic list of ingredients in this chili. It's simple to put together and is one of the best chili's I've ever tasted. Simmer it as long as you can to blend the flavours together. I made it the night before then put it in my crockpot for 4 hours on low. Perfect for a large crowd!

2lbs ground beef
1lb bulk Italian sausage
3/4 lb bacon, diced
1 (28oz) can beans in tomato sauce (ie Libby's)
1 (19oz) can kidney beans
1 (14oz) can beans in BBQ sauce
2 (28oz) cans diced tomatoes with juice
2 (10oz) cans sliced mushrooms
1 (6oz) can tomato paste
1 large yellow onion, chopped
1 green pepper, seeded and chopped
1 red pepper, seeded and chopped
2 green chile peppers, seeded and chopped (optional)
4 cubes beef bouillion
1/2 cup beer
1/8 cup chili powder
1 tbsp Worchestershire sauce
1 tbsp garlic
1 tbsp dried oregano
2 tsp cumin
1-2 tsp hot pepper sauce (ie Tabasco)
1 tsp dried basil
1 tsp salt
1 tsp black pepper
1/2-1 tsp cayenne pepper
1 tsp paprika
1 tsp sugar
1 (10.5oz) bag corn chips
1 cup shredded Cheddar cheese (garnish)
1 (16oz) container sour cream (garnish)

Heat a large stock pot over medium-high heat. Crumble ground beef and sausage into the hot pan. Add bacon. Cook until evenly browned. Drain off excess grease.

To the meat mixture add: beans, kidney beans, beans in BBQ sauce, diced tomatoes, mushrooms and tomato paste. Add the onion, green and red peppers, chile pepper (if using), bouillion and beer.

Then season the with chili powder, Worchestershire, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika and sugar. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.

After 2 hours, taste and adjust the salt, pepper and chili powder, if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve or refrigerate and serve the next day.

To serve: Ladle into bowls and top with corn chips, shredded Cheddar cheese and dollops of sour cream.
