Loaded Baked Potato Pizza



Long-time readers of my blog know that I love potatoes. Not in the 'I fancy them' or 'I kinda like them once in awhile' way. 

That's cute. 

No. I luuurve them. I'm a self-proclaimed, full-on spud addict and devotee. I simply adore them in any form. Baked, fried, mashed, smashed, roasted, au gratin, scalloped, chips, just their skins, as a salad and don't forget sweet potato pie! There never was a spud I didn't love. I take after my Mom that way.

Today at lunch I looked in the fridge and the leftover fairy had been generous. My dad is king of making delicious stews and sauces with various bits and bobs of leftovers, so I come by my leftover scavenging honestly. Today I had leftover real bacon bits, a cooked baked potato, green onions, my requisite sour cream, and some naan bread. Sounded like ingredients for a potato pizza!! Yaaaaahhh!

While I love the flavour of a baked potato (skins on), you could also use those little frozen hashbrown bits (McCain or Cavendish are brands I've used in the past) or you could use leftover mashed potatoes too. Yu-um!

With its hint of Ranch and Parm in the 'sauce' and its simple ingredients, this is a crazy easy, super delicious meal that tastes like a fully loaded baked potato. Fellow spud lovers, you are welcome.


Loaded Baked Potato Pizza
Yield: 1 individual pizza



1 naan bread

2 tbsp sour cream (I used full fat)
1-2 tbsp Ranch dressing
1 tbsp Parmesan cheese, grated

1 large leftover baked potato - cooled, skins on & cut into bite-sized pieces
1/4 cup real bacon bits
1 green onion, chopped
1 tbsp fresh garlic - minced
1/4 cup Mozzarella cheese, shredded
1/4 cup Cheddar cheese, shredded
2 tbsp Parmesan cheese, grated

Preheat oven to 400F.

Place naan bread on a baking sheet.

In a small dish, combine sour cream, Ranch dressing and Parmesan cheese. Spread over naan bread.

Top with potato, bacon bits, green onion, and fresh garlic. Sprinkle with three cheeses.

Bake for approximately 10 minutes or until the cheese is starting to bubble and the crust is a bit crispy. Let it sit a minute or two and then cut into quarters and enjoy!
