Overnight Maple and Brown Sugar Oatmeal


My mornings before work are precious to me. Laurie doesn't function well or put on her happy face if she doesn't get her 'Me Time'. My mornings, before I head off to work, are delightfully quiet. The coffee is poured, and I usually read, snuggle with my dog Scout, and get a quick kiss from my husband before he commutes to work -- in the basement. I may get a brief sighting of one of my kids but they're in their late teens/early 20's so unless they work, have an online class or there's an earthquake to interrupt their slumber, they are morning averse.

I'm a total planner and I like easy breakfasts, so this overnight oatmeal is perfect for me. I usually double the recipe and make two servings at once. It's nice to know you have your breakfast ready at 7pm the night before.

This is a super versatile breakfast option that you can tweak it to your tastes, but I like the standard maple and brown sugar and I usually eat it cold. I often add some chia seeds because they are rich in fiber, antioxidants, and heart-healthy omega-3 fatty acids. They are a super food, and this recipe is an easy way to eat them. I also use the Decacer brand Maple Flakes (my mother-in-law got them for me from Costco, but you can find them on Amazon.ca as well) and I love that they're Canadian, made from 100% maple syrup and so easy to use.

So, if you like to get ahead of the morning game, you might want to jump on the overnight oatmeal bandwagon. 


Overnight Maple and Brown Sugar Oatmeal
Serving: 1



1/2 cup quick oats
1/4-1/3 cup milk
1/4 tsp vanilla extract
1 tbsp brown sugar
1 tbsp maple flakes
1/4 tsp cinnamon
2 pinches/shakes nutmeg
1 pinch/shake cloves
1 tsp chia seeds (optional)

Pour oats, milk and vanilla into a small mason jar. Add brown sugar, maple flakes, spices and chia seeds (if using). Mix well with a spoon and/or secure lid and shake well.

Store in the fridge for at least several hours - preferably overnight.

In the morning: Mix well and if desired, heat it up a bit in the microwave or eat it cold (my preference). If you double or triple the recipe, this oatmeal can be stored in the fridge for a few days. 

Tip: This is a very versatile recipe. Try new spices or adding your favourite flavours - strawberries, bits of frozen peaches, mandarin oranges, Greek yogurt, peanut butter, cocoa ....
