Saucy Tortellini Casserole


This is a casserole I threw together one night when I needed a quick casserole. Make sure you use fresh Parmesan if you can. Makes a BIG difference in taste.

½ lb Fresh tortellini (approximately ½ pkg)
¼ cup Butter or margarine
2 Garlic cloves, minced
1 ½ cups Button mushrooms, halved
1/2 Green pepper, sliced
¼ cup Flour
2 cups Milk
2 cups Grated old white cheddar cheese
½ tsp Oregano
½ tsp Basil
1 (5.5oz)can Tomato paste
6 Bacon slices, cooked and crumbled
Garnish Fresh parmesan cheese & freshly ground black pepper

Preheat oven to 350F.
In a large saucepan, cook tortellini until they float (approximately 6 minutes). Drain; set aside.
Meanwhile, in a large skillet, melt butter. Add garlic, mushrooms and green pepper; cook for 3 minutes. Add flour; mix. Cook for 1 minute. Add milk and stir until thickened. Add old white cheddar cheese, tomato paste, bacon and spices. Add tortellini and mix well. Pour into a casserole dish. Sprinkle with parmesan cheese and bake for 20 minutes.
Yield: 6 servings
