Cheesy Cauliflower

For most kids getting them to eat cauliflower can be a chore. Pour this gooey, cheesy sauce over cauliflower (or broccoli) and watch them ask for seconds.

1/2 tsp salt
1 large head cauliflower, cut into pieces
3 tbsp butter
3 tbsp all-purpose flour
1/2 tsp dried thyme
1 1/2 cups milk
1 1/2 cups shredded Cheddar cheese
Garnish minced fresh parsley


In a large saucepan filled with 1 inch of water, place a vegetable steamer. Add cauliflower pieces to steamer. Bring water to boil. Reduce heat; cover and cook for 5-15 minutes or until cauliflower is crisp-tender.
Meanwhile, in a small saucepan, melt butter; stir in flour and thyme until blended. Cook for 1 minute. Gradually add milk; stirring constantly. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese, stirring until melted.
Remove cauliflower from steamer; place on a serving platter. Top with cheese sauce; sprinkle with parsley.
