Chocolate Molten Lava Cakes



On the request of my son "Cub" I began my search for a chocolate lava cake. I found this one on grouprecipes.com that used semi-sweet chocolate (which I had in abundance in my pantry). This was .... amazing! It tastes like thick hot chocolate (not too rich) and it looked so good too! I was quite impressed with myself. So much so that I had my husband Brad take a picture of it before we could eat it.


To prepare pan -- white sugar
4 squares of semi-sweet chocolate
1/2 cup butter (no substitutes)
1 cup icing sugar
2 eggs
2 egg yolks
6 tbsp flour

Garnishes:

2 large strawberries cut in half lenthwise

icing sugar

chocolate sundae topping



Directions

Preheat the over to 425F.


Butter the sides of 4 (3" diameter) custard or souffle dishes and place onto a baking sheet (to make it easier to get the dishes in and out of the oven).


On a piece of parchment paper outline the bottom of the four dishes. Cut out the circles - making the circles a little smaller than the traced circle so that they fit into the dishes. Butter each circle and place each circle into each dish with the buttered side up. Sprinkle a bit of white sugar into each custard cup and swirl it around (this will stop the paper from sticking to the cakes).


Microwave the chocolate and butter in a large bowl on high for 1 minute or until the butter is melted. Stir with wire whisk until chocolate is completely melted. Stir in sugar until well blended. Whisk egg and egg yolks. Stir into chocolate mixture. Stir in flour.

Divide batter between the prepared cups.

Bake for 13 to 14 minutes or until the sides are firm but centers are soft. DO NOT OVERBAKE OR YOU WON'T HAVE ANY 'LAVA'. Let stand for 1 minute.

Carefully run a small knife around the cakes to loosen. Zig zag chocolate sauce over bottom of plate. Invert the cakes onto a dish. Top with half of a strawberry and sprinkle with icing sugar. Serve immediately.


Tips: Don't let the cakes sit for too long because the lava will start to harden and you'll just get ... cake.
