Ultimate Grilled Cheese Sandwiches

I came across this recipe back in the spring of 2000. It was in one of my favourite recipe magazines "Quick Cooking" by Taste of Home. A great magazine if anyone is looking for something that gives them great 'tried and true' recipes from regular cooks.

This recipe makes the BEST grilled cheese you'll ever eat. With three kinds of cheese it's really decadent and rich. It's great with tomato soup (or my butternut squash soup) -- recipe links below!

This recipe is my daughter's hands-down, favourite grilled cheese sandwich. Easy to make and you can keep the mixture in the fridge for a couple of days for those grilled cheese emergencies!

3 oz. cream cheese, softened
3/4 cup mayonnaise
1 cup cheddar cheese, grated
1 cup mozzarella cheese, grated
1/2 -1 tsp garlic powder
1/8 tsp seasoning salt
10 slices of Italian bread (1/2" thick)
2 tbsp. butter or margarine, softened

In a mixing bowl, beat cream cheese and mayonnaise until smooth. Stir in grated cheeses, garlic powder and seasoning salt. Butter one side of each slice of bread. Spread mixture over 5 slices of bread (approximately 1/3 cup each). Don't over stuff the sandwiches because the sandwiches will be too rich and runny. 

Top with remaining bread slices. Cook sandwiches in a large skillet over medium heat until golden brown on both sides.
