I'm always on the lookout for quick and tasty fish dishes. It's a great way to use the underused broiler -- and is perfect for when you don't have the heart to send your hubby out into a winter blizzard to BBQ some fish for dinner. ;)
Marinade
1 tbsp packed brown sugar
1 tbsp butter or margarine, melted
1 tbsp olive or vegetable oil
1 tbsp honey
1 tbsp soy sauce
1 tbsp Dijon mustard
1 garlic clove, minced
1lb salmon fillet
In a small bowl, mix together marinade ingredients.
Place salmon, skin-side down, in a shallow glass or plastic dish. Pour marinade over salmon. Cover and refrigerate at least 15 minutes but no longer than 1 hour.
Set oven to broil. Remove salmon from marinade; reserve marinade. Place salmon, skin-side down, on rack in broiler pan. Broil with top 4-6 inches from medium heat 10 to 15 minutes, brushing 2 or 3 times with marinade, until salmon flakes easily with fork. Discard any remaining marinade.
